A recipe for Guinness Reduction Dipping Sauce! This easy dipping sauce comes together with simply Guinness and brown sugar.
One evening during our trip to Orlando last year, we ate dinner at Raglan Road Irish Pub and Restaurant in Downtown Disney (now Disney Springs).
All of the food was delicious, but the Guinness Reduction Dipping Sauce paired with Irish Brown Bread was particularly memorable.
When we got back home, I searched for ideas to recreate it and found the sauce was actually quite easy with only two ingredients and some time simmering on the stove!
For the reduction, equal parts Guinness and light brown sugar are simmered together until the liquid is reduced by half and starting to thicken.
To serve, the Guinness reduction is poured into a small bowl with equal parts olive oil.
While I paired it with brown bread, soda bread, another rustic bread, or as a part of a cheese board would also be delicious options.
A Few Tips
I found mixed recipes regarding the sugar. Some used granulated sugar and others used brown sugar. I went with the brown sugar to complement the Guinness with an extra depth of flavor.
Keep an eye on the saucepan as the mixture simmers, especially towards the end of cooking. It may bubble up and over the sides if the pan isn’t big enough.
If the mixture does bubble close to the edge, briefly remove from the stove and allow to settle before placing back over low heat.
Stir the edges and sides of the saucepan well as the liquid starts to thicken to keep it from burning.
Only simmer just until the liquid is reduced by half, about 45 to 60 minutes. The consistency will continue to thicken as it cools.
Don’t try to speed up the time by cooking at a higher heat. It needs the lower temperature to help develop the flavor.
This recipe yields about 1 1/2 cups (355 milliliters) of the Guinness Reduction. The amount of Guinness and brown sugar can easily be halved for a smaller amount.

Guinness Reduction Dipping Sauce

Ingredients
- 2 cups (470 milliliters) Guinness
- 2 cups (400 grams) light brown sugar
- Olive oil for serving
Instructions
In a medium saucepan, whisk together Guinness and brown sugar over medium heat.
Once it begins to bubble, reduce heat to low and simmer, stirring occasionally, until reduced by half, 45-60 minutes.
Remove from heat and allow to cool to room temperature. It will thicken further as it cools.
Once room temperature, store refrigerated in an airtight container for up to 1 week.
Serve with a small bowl for dipping with equal parts olive oil.
